Apple Pancakes

My son, Scott, has been reminiscing about the green apple pancakes and apple cider syrup I used to make, so Tiffany requested the recipe:


Green Apple Pancakes

3/4 cup granny smith apples, grated
2 cups buttermilk
2 tbsp. butter, melted
2 eggs
2 cups flour
2 tbsp. sugar
1/2 tsp. cinnamon
2 tsp. baking soda
1 tsp. salt

Stir together the eggs and melted butter until well-mixed. Blend in the grated apples. Sift together all the dry ingredients. Gently fold the dry into the liquid until moistened. Do not beat or over stir [batter will be lumpy]. Cook on hot skillet. Serve with warm apple cider syrup.

Apple Cider Syrup
1 cup sugar
2 tbsp. cornstarch
1/4 tsp. cinnamon
1/4 t. nutmeg
2 cups apple cider
2 tbsp. lemon juice
1/4 cup butter [optional]

Pour the cider and lemon juice into a saucepan. Sift together the first four dry ingredients, and stir it into the saucepan. Cook until thick and boil one minute. Remove from heat and add butter [if desired]. Stir until butter is melted.


These recipes make a unique gift, especially at Christmas, but is appreciated any time you give it. In a gift bag with tissue place two granny smith apples a jar of apple cider syrup and the two recipes...
