Preserving the Fall Harvest

I found this magical recipe here...



:: Apple Pie Filling ::

20 apples
10 cups water
5 cups sugar
1 cup corn starch
2.5 tsp. cinnamon
1 tsp. nutmeg
1 tsp. salt
lemon juice

Wash, peel, core, and slice any variety of apples you like:
Gala, Granny Smith, Jonagold, Winesap; or mix it up.
Submerge the apple slices in a large bowl of water
with 1 to 2 Tbsp. lemon juice to prevent browning.

In a large saucepan, combine the
water, sugar, corn starch, cinnamon, nutmeg, and salt.
Bring to a boil and stir in 3 Tbsp. lemon juice.

Spoon apple slices into sterilized quart canning jars until
they almost reach the lip. Ladle the caramel sauce over
the apples to about 1/2 inch of the jar top. Seal the jars
and then process in a boiling water bath for 20 min.

MMMMMMMMMM!!!! I can't wait to have an apple tree someday and get to actually harvest something. LOL! Maybe I can just get a few from Costco and try the pie filling anyway.
