Nigerian Spinach Stew

1 large onion (diced)
1 large green bell pepper (diced)
2-3 small Roma tomatoes (diced)
½ bag thawed frozen spinach or fresh diced spinach
Dried spicy red pepper seasoning, to taste
1-2 tsp. of yellow Jamaican curry
Sea salt, to taste
2-3 Tbsp. tomato paste
1-2 cups of cooked beef, cubed
Olive oil

For the beef: Saute beef and a portion of the onions on medium heat with olive oil, salt and yellow curry, until browned.

For the stew: Saute diced vegetables in olive oil, starting with the onions. Cook until transparent. Add salt and spicy red pepper to taste. Add bell peppers until slightly done, and then add tomatoes. Allow to stew. Add tomato paste, stir and allow to cook for about 3-5 minutes. Then add spinach and stir. Add some water if needed. Finally, add cooked beef. Continue to stir and allow to cook until spinach is done and everything is heated through.
