Tikka Marsala Chicken Wings

For the wings:
3 lbs chicken wings
Extra Virgin Olive Oil for the pan


For the Marsala sauce:
1 tsp garam marsala
1 tsp powdered ginger
1 tsp ground coriander
1 tsp ground cumin
1 tsp ground cardamom
1/2 tsp granulated garlic
1/2 tsp cayenne
Salt to taste
2 Tbs tomato paste
1/2 c coconut milk

Preheat oven to 400ºF and place rack in middle. Lightly grease baking sheet with extra virgin olive oil and place wings skin side down. Bake for about 15 min.

Using tongs, flip the wings and turn the oven to broil. Broil until crispy, about 15 min.

In the meantime, make the sauce: combine spices in a medium-size sauté pan. With heat on low, sauté spices until fragrant (about 5 min.) whisk in tomato paste and coconut milk.

Once the wings are crispy and out of the oven, toss them in the Marsala sauce.
