Classic Banana Bread

2 cups flour
3/4 tsp. baking soda
1/2 tsp. salt
3 ripe bananas (spotted)
1 cup sugar
1/4 cup butter, soft
2 eggs
1/3 cup plain yogurt
1 tsp. vanilla

In a medium-size bowl, add flour, soda, and salt. Then whisk gently to combine and set aside.

Peel the bananas and then mash them, with a potato masher,  in a separate bowl, until they are runny and set it aside.

In a large bowl, or the bowl of stand mixer, combine the sugar and butter and mix together until well-combined.  Add the eggs, one at a time, and mix until incorporated.  Then add the mashed bananas, yogurt, and vanilla and blend until smooth. Add the dry ingredients and again mix until smooth.

Pour batter into a standard, greased loaf pan. Bake at 350°F for 1 hour in the center of the oven. When finished baking, let the bread cool for 5-10 minutes in the pan and then turn it out onto a cooling rack to finish cooling.
