Coconut Bread

My friend Julie Nelson is a fabulous cook,
and
this is one of her so-called easy recipes:


4 large eggs
2 cups sugar
1 cup oil
2 tsp. coconut flavoring
3 cups flour
.5 tsp. baking soda
.5 tsp. baking powder
.5 tsp. salt
1 cup buttermilk
1 cup coconut
1 cup chopped nuts [optional]

Blend the first four ingredients well, and set aside. Sift together the next four ingrdients. Add this flour mixture to the egg mixture, then fold in the final three ingredients. Bake in a greased loaf pan at 325ยบ for 1 hour and 15 minutes.

after the bread has cooled slightly. pour the following mixture over the top of the bread and let it set for 4 hours before eating:

1 cup sugar
1/2 cup water
2 tbsp. butter
1 tsp. coconut flavoring

Boil the first three ingredients for 5 minutes. Remove from heat and add the coconut flavoring. Pour on top of the bread. Makes 3 loaves.
