Plantation Salad

Plantation Salad is made with avocado, Bermuda onion, fresh sliced orange, and pineapple. These fruits and vegetables are serve on a bed of salad greens and toped with an orange marmalade dressing.

1/2 cup orange marmalade
juice of 1 lemon (about 1/3 cup)
1/4 tsp freshly ground pepper
1/4 cup peanut or vegetable oil
1/3 cup sour cream or plain yogurt
1 bunch green onions, thinly sliced

Place marmalade and lemon juice in glass measuring cup. Heat in microwave for 2minutes or until marmalade melts. Stir in remaining ingredients and chill before serving.

1 small head leaf lettuce or other salad greens
1 large ripe avocado peeled and thinly sliced
1 large orange peeled and thinly sliced
1 small Bermuda onion peeled and thinly sliced
1 small fresh pineapple sliced into bits
1/4 chopped cashews

Arrange lettuce on individual serving plates or large serving platter. Top with avocado, orange, onion, and pineapple. Drizzle with dressing and garnish with cashews. (Makes 6 servings)
