Rhubarb Cake

1½ cups brown sugar
½ cup butter, softened
1 egg
¼ tsp. salt
1½ cups rhubarb; diced
1 cup sour milk (add 1 tsp. vinegar to make it sour)
1 tsp. baking soda
1 tsp. vanilla
2 cups flour
2 Tbsp. white sugar
½ tsp. cinnamon.

Mix brown sugar, butter, egg, and salt. 
Add baking soda to sour milk and add to the first ingredients. 
Add vanilla and flour; then add rhubarb. 
Pour into a 9x13” greased, cake pan.  
Mix white sugar and cinnamon together and sprinkle on top of the cake. 
Bake at 350°F for 35-40 minutes. Serve with whipped cream on top.
