Zucchini Oatmeal Muffins



2-1/2 cups all-purpose flour*

1 Tbsp. baking powder

1 tsp. salt

1 tsp. ground cinnamon

1-1/2 cup sugar

1/2 cup quick-cooking oats**

4 large eggs, lightly beaten

3/4 cup canola oil

1-1/2 cup shredded, peeled zucchini

1/2 cup raisins or chopped dates

1/2 cup chopped pecans (optional


In a bowl, whisk together flour, baking powder, salt, cinnamon, sugar, and oats. Whisk the eggs and oil together and then add to dry ingredients just until moist. Fold in zucchini, raisins, and pecans. 

Spoon into greased or paper-lined muffins cups .

Bake at 400°F for 20-25 minutes. Cool for 5 minutes before removing to wire racks. Makes 18-20. 


* Can also use 1 cup whole wheat flour and 1/2 cup white

•• Can also add 1-2 Tbsp. flax meal
